First look: Andrew Weissman's new restaurant

Chef Andrew Weissman is responsible for some of San Antonio’s best restaurants, past and present. The late Le Rêve made him famous, and his Osteria Il Sogno was named No. 1 by the San Antonio Express-News in its Top 100 guide this year. There have been lower-key projects in between. But Weissman is getting back in the high-end game with Signature, the restaurant he opened Nov. 21 at La Cantera Resort & Spa.
It's big news for food people in Austin and San Antonio alike, because Weissman is a destination chef, no matter which restaurant is getting his full attention at the moment. Il Sogno was among my favorite reviews of the past five years.
I visited Signature on opening day as the new restaurant critic for the Express-News. I was, in fact, Signature's first paying customer. It wasn't a review, just a chance to get a sense of the place, to see the kitchen framed like a Renaissance painting, to see antique farmhouse relics spanning six centuries.
That first visit included charcuterie on a vintage bread-baking paddle, roasted pheasant with crispy skin, foie gras au torchon with a wine-poached pear, gnocchi with field mushrooms and a barrel-aged Vieux Carre cocktail with a New Orleans growl.
