Review: Two Bros. BBQ in San Antonio

When the brisket is having a good day at Two Bros. BBQ Market in San Antonio, go ahead and mention it in the same breath (or breathlessness) as Franklin or Freedmen’s or Snow’s. Save some of that breath for cherry-glazed baby-back ribs, too.
Credit both to Two Bros. pitmaster Laura Loomis, who also turns out pulled pork full of bark and bite and does her best with sausage bought from somewhere else. Give her credit, and hope that she’s there when you go, because it wasn’t as good when she wasn’t at the pits.
Consistency is the key to good barbecue. It’s the real art of the thing, and it’s the thing Two Bros. could do better. Consistency is what we should expect from San Antonio chef and empire builder Jason Dady.
Although San Antonio’s a bit far afield of the BBQ City Limits series I started four years ago in Austin, it’s nice to break out the barbecue board again.
